| A SUBTLE COMBINATION OF TERROIR, OF GRAPES AND OF MEN.
Effective cultural practice aims to maximise the potential of the terroir, using the most authentic and appropriate methods. From the management of the soil, to the choice of the vines, to the removal of under-ripe and excess bunches to the vital decision of when to start harvesting, and to the selective picking which takes into account the ripening of the grapes.
The vats are prepared according to the wine grower’s selections. The grapes, on their arrival at the cellar are, if necessary, brought up to an ambient temperature before undergoing fermentation. They are fermented separately in single strain vats, before the winemaker uses his unique understanding and experience to allow them to perform to their maximum potential.
